  • 3/4 cup chopped cucumber
  • 2/3 cup sliced cherry tomatoes
  • 1/2 cup chopped red bell pepper
  • 1/3 cup sliced kalamata olives
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley for garnish
  • 1/4 cup extra virgin olive oil
  • 1/4 cup apple vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. In a large mixing bowl, combine drained and rinsed chickpeas with chopped cucumber, tomatoes, bell pepper, olives, red onion, and feta cheese if using.
