Ingredients
- 2 (15-ounce) cans of chickpeas
- 3/4 cup chopped cucumber
- 2/3 cup sliced cherry tomatoes
- 1/2 cup chopped red bell pepper
- 1/3 cup sliced kalamata olives
- 1/4 cup chopped red onion
- 1/4 cup crumbled feta cheese (optional)
- Fresh parsley for garnish
- 1/4 cup extra virgin olive oil
- 1/4 cup apple vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- In a large mixing bowl, combine drained and rinsed chickpeas with chopped cucumber, tomatoes, bell pepper, olives, red onion, and feta cheese if using.
- In a mason jar, mix olive oil, apple vinegar, Dijon mustard, oregano, garlic powder, salt, and pepper. Shake until well combined.
- Pour the dressing over the salad ingredients and toss gently to coat.
- Serve immediately or refrigerate for at least 30 minutes to enhance flavors.
