Instructions
- Reduce apple cider by simmering it on medium heat until it thickens to about ¼ cup; let cool.
- Cream together softened butter and sugar until fluffy.
- Beat in eggs one at a time and stir in vanilla extract.
- In another bowl, whisk flour, baking soda, and salt; gradually add to wet mixture until just combined.
- Stir in reduced cider and caramel bits gently.
- Chill dough for at least 30 minutes.
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- Roll dough into balls, optionally coating them in sugar.
- Bake for 9-11 minutes until edges are golden brown.
