Ingredients
- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter, diced
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup lightly packed brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream (or Greek yogurt)
- 1–½ teaspoons baking powder
- ½ teaspoon baking soda
- 1–½ teaspoons ground cinnamon
- Pinch allspice
- 1/4 teaspoon coarse kosher salt
- 1–¾ cups all-purpose flour
- 1 tablespoon butter, at cool room temperature
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F and prepare a 9-inch square baking dish with parchment paper.
- In a sauté pan, boil the apple cider until it reduces by half (about 5 minutes). Mix in diced butter until melted.
- In a mixing bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, ground cinnamon, allspice, and salt. Combine with the reduced cider.
- Stir in flour until no dry spots remain.
- Pour batter into the prepared dish and bake for 22–25 minutes or until golden brown.
- Let cool slightly before topping with butter and cinnamon-sugar mixture. Cool completely before slicing.
