  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream (or Greek yogurt)
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and prepare a 9-inch square baking dish with parchment paper.
  2. In a sauté pan, boil the apple cider until it reduces by half (about 5 minutes). Mix in diced butter until melted.
  3. In a mixing bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, ground cinnamon, allspice, and salt. Combine with the reduced cider.
  4. Stir in flour until no dry spots remain.
  5. Pour batter into the prepared dish and bake for 22–25 minutes or until golden brown.
  6. Let cool slightly before topping with butter and cinnamon-sugar mixture. Cool completely before slicing.
