- 2 cups all-purpose flour

- 3/4 cup unsalted butter (room temperature)
- 3/4 cup light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups diced Granny Smith apples
- 3/4 tsp baking soda
- 1 3/4 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
- In a bowl, combine flour, oats, baking soda, cinnamon, nutmeg, and salt; set aside.
- In a large bowl, cream together room temperature butter and both sugars until fluffy.
- Add eggs one at a time and mix well after each addition. Stir in vanilla extract.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Gently fold in the diced apples until evenly distributed.
- Scoop tablespoon-sized balls of dough onto prepared sheets; bake for 9-12 minutes or until golden at the edges.
- Cool on sheets for 4-5 minutes before transferring to wire racks.
