Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
- In a bowl, mix flour, butter, brown sugar, granulated sugar, salt, and cinnamon for the streusel until crumbly; stir in reserved diced apples.
- In another bowl, whisk together sour cream, pumpkin, apple juice, sugars, egg yolk, and vanilla extract until smooth.
- Combine dry ingredients—flour, baking soda, salt, and spices—in a separate bowl.
- Gradually fold dry ingredients into the wet mixture until just combined; gently fold in diced apples.
- Fill muffin cups two-thirds full with batter and sprinkle with streusel topping.
- Bake for about 18 minutes or until golden brown; cool slightly before serving.
