- 1 medium apple, peeled and finely diced
- 2 tbsp (25g) granulated sugar for topping
- 1 tsp ground cinnamon for topping
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Cream together softened unsalted butter, granulated sugar, and brown sugar until fluffy.
- Beat in one large egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually mix dry ingredients into the wet mixture until just combined. Fold in diced apple gently.
- Transfer the batter to the prepared pan and sprinkle with cinnamon-sugar topping before baking for 25–30 minutes.
