  • 1 1/2 cups (180g) all-purpose flour

  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 medium apple, peeled and finely diced
  • 2 tbsp (25g) granulated sugar for topping
  • 1 tsp ground cinnamon for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Cream together softened unsalted butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in one large egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually mix dry ingredients into the wet mixture until just combined. Fold in diced apple gently.
  6. Transfer the batter to the prepared pan and sprinkle with cinnamon-sugar topping before baking for 25–30 minutes.
