  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups unsalted butter, cold and cubed
  • 1 large egg, lightly beaten
  • 2 cups dried apricots, chopped
  • 1/2 cup granulated sugar (adjust to taste)
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon almond extract (optional)

Instructions

  1. Prepare the apricot filling by simmering chopped apricots with water and sugar until tender. Stir in lemon juice and almond extract before cooling.
  2. Preheat the oven to 375°F (190°C). Grease a baking pan.
  3. Mix flour, sugar, baking powder, and salt in a bowl. Cut in cold butter until crumbly. Add egg and vanilla; mix gently.
  4. Press most of the dough into the prepared pan and spread cooled apricot filling over it.
  5. Crumble remaining dough on top and bake for 30-35 minutes until golden.
  6. Cool completely before cutting into bars.
