Ingredients
- 3 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups unsalted butter, cold and cubed
- 1 large egg, lightly beaten
- 2 cups dried apricots, chopped
- 1/2 cup granulated sugar (adjust to taste)
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon almond extract (optional)
Instructions
- Prepare the apricot filling by simmering chopped apricots with water and sugar until tender. Stir in lemon juice and almond extract before cooling.
- Preheat the oven to 375°F (190°C). Grease a baking pan.
- Mix flour, sugar, baking powder, and salt in a bowl. Cut in cold butter until crumbly. Add egg and vanilla; mix gently.
- Press most of the dough into the prepared pan and spread cooled apricot filling over it.
- Crumble remaining dough on top and bake for 30-35 minutes until golden.
- Cool completely before cutting into bars.
