  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1.5 lbs beef chuck or stewing beef, cut into bite-sized pieces
  • 1 large tomato, pureed
  • 1 cup beef broth or water

Instructions

  1. In a small bowl, mix together ground coriander, cumin, turmeric, paprika, red chili powder, and garam masala to create the spice blend.
  2. Heat oil in a large deep pan over medium heat. Sauté chopped onions until golden brown (about 10 minutes).
  3. Add minced garlic and grated ginger; cook for another minute until fragrant.
  4. Increase heat to medium-high and add beef pieces; sear until browned (5–7 minutes).
  5. Sprinkle the spice blend over the beef and stir well; toast for about 30 seconds.
  6. Stir in pureed tomato and broth/water; bring to a boil then reduce heat to low.
  7. Cover and simmer slowly for 60–75 minutes until beef is tender.
  8. Adjust seasoning as needed before serving hot with rice or naan.
