Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 red onion, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
- Add chicken pieces to the marinade; coat thoroughly and refrigerate for at least 30 minutes.
- Thread marinated chicken onto soaked skewers with chunks of onion and bell peppers.
- Preheat grill to medium-high heat; grill skewers for 10-15 minutes until cooked through.
- Let rest before serving with pita bread and tzatziki sauce.
