- 2 ripe avocados
- 4 thick slices of sourdough or multigrain bread
- 4 oz smoked salmon
- 1/3 cup crème fraîche
- 1 tbsp fresh lemon juice
- Zest from one lemon
- 1 tbsp chopped fresh dill
- 2 spring onions (chopped)
- 2 tbsp capers (chopped)
- Extra virgin olive oil for grilling
- Salt and pepper to taste
Instructions
- Grill the Bread: Brush both sides of the bread slices with olive oil. Grill in a skillet over medium-high heat for about 2 minutes on each side until golden brown.
- Prepare the Crème Fraîche Mixture: In a mixing bowl, combine crème fraîche, lemon juice, lemon zest, dill, spring onions, capers, salt, and pepper.
- Assemble Your Toast: Spread mashed avocado on each slice of grilled bread. Layer with smoked salmon and finish with a dollop of the lemon-herb crème fraîche.
