- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 large sweet onion, thinly sliced
- 1/4 cup white apple vinegar
- 1 tablespoon fresh minced thyme
- 2 cups beef broth
- 1 lb gnocchi
- Salt and pepper to taste
- 1 cup shredded swiss or gruyere cheese
- 8–10 slices French bread, toasted
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet or Dutch oven, melt olive oil and butter over medium heat. Add thinly sliced onions and cook until deep caramelized brown (about 20 minutes).
- Deglaze with white apple vinegar, scraping up any browned bits. Stir in thyme and beef broth, simmering the mixture.
- Add gnocchi to the simmering broth, stirring occasionally until tender (about 5-10 minutes). Season with salt and pepper.
- Transfer the mixture to a greased baking dish, top with shredded cheese, and bake for 20-25 minutes until bubbly and golden.
- Serve hot alongside toasted French bread slices.
