Ingredients
- 4 (8-inch) tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 3 cups chopped fresh spinach
- 8 oz sliced mushrooms
- Olive oil (for brushing)
Instructions
- Preheat your oven to 400°F (200°C).
- In a microwave-safe bowl, soften the sliced mushrooms by microwaving for 2-3 minutes; drain excess liquid.
- Lightly brush one side of each tortilla with olive oil and place oiled side down on a baking sheet.
- On half of each tortilla, layer half the cheese, then add spinach and softened mushrooms, topping with the remaining cheese. Fold over.
- Bake quesadillas for 6 minutes, then flip and bake for an additional 6-7 minutes until golden brown.
- Let cool slightly before slicing into wedges and serve warm.
