Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin pan with liners.
- In a mixing bowl, cream together softened butter and granulated sugar until smooth. Add the egg, buttermilk, and vanilla extract; mix well.
- In another bowl, whisk together flour, baking powder, and salt. Gradually fold this into the wet ingredients until just combined. Gently mix in diced strawberries.
- For the streusel topping, combine flour, brown sugar, granulated sugar, and chilled butter in a bowl until crumbly.
- Spoon batter into muffin cups until two-thirds full and sprinkle generously with streusel topping.
- Bake for approximately 25 minutes or until golden brown and a toothpick comes out clean.
