Ingredients
- 1 1/2 cups crushed vanilla wafers
- 1/3 cup melted butter
- 3 ripe bananas, mashed
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup banana pudding mix
Instructions
- Preheat oven to 325°F (163°C).
- In a mixing bowl, combine crushed vanilla wafers with melted butter; press into a 9-inch springform pan for the crust.
- Beat cream cheese and sugar until smooth; add eggs one at a time, mixing well after each addition. Stir in mashed bananas and vanilla extract.
- In another bowl, whip heavy cream until stiff peaks form; gently fold in banana pudding mix.
- Combine both mixtures carefully and pour over the crust.
- Bake for 50-55 minutes or until set.
- Cool at room temperature then refrigerate for at least four hours before serving.
