Ingredients
- 2/3 cup packed light brown sugar
- 2 tablespoons unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 2/3 cup mashed ripe banana (about 2 medium bananas)
- 1/2 cup sour cream
- 2/3 cup whole milk
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 3/4 cup graham cracker crumbs
- 1 cup miniature chocolate chips, divided
- 1 cup miniature vegan marshmallow bits, divided
Instructions
- Preheat your oven to 400°F. Line a muffin pan with cupcake liners or spray with nonstick baking spray.
- In a large bowl, mix together melted butter and brown sugar until combined. Add the egg, vanilla extract, mashed bananas, and sour cream; beat until smooth.
- In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
- Gradually add dry ingredients to the wet mixture alternately with milk; stir until just combined.
- Fold in three-fourths of the chocolate chips and marshmallow bits gently by hand.
- Fill muffin liners evenly with batter and sprinkle remaining chocolate chips and marshmallow bits on top.
- Bake for about 16 minutes or until a toothpick comes out clean when inserted into the center.
- Allow muffins to cool for a few minutes before transferring them to a wire rack.
