  • 1 teaspoon vanilla extract
  • 2/3 cup mashed ripe banana (about 2 medium bananas)
  • 1/2 cup sour cream
  • 2/3 cup whole milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

Instructions

  1. Preheat your oven to 400°F. Line a muffin pan with cupcake liners or spray with nonstick baking spray.
  2. In a large bowl, mix together melted butter and brown sugar until combined. Add the egg, vanilla extract, mashed bananas, and sour cream; beat until smooth.

  4. Gradually add dry ingredients to the wet mixture alternately with milk; stir until just combined.
  5. Fold in three-fourths of the chocolate chips and marshmallow bits gently by hand.
  6. Fill muffin liners evenly with batter and sprinkle remaining chocolate chips and marshmallow bits on top.
