Ingredients
- 2 large sweet potatoes
- 1.5 lbs boneless chicken (breasts or thighs)
- 1–1.5 cups BBQ sauce
- 1 can black beans
- 1 cup corn
- 1/2 small red onion
- 1 ripe avocado
- 1 cup shredded cheese (cheddar or Monterey Jack)
- Fresh cilantro
- Greek yogurt or sour cream
Instructions
- Preheat oven to 425°F (220°C).
- Toss sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Roast on a baking sheet for 25-30 minutes until golden.
- Poach chicken in water or broth with aromatics for 20-25 minutes until cooked through; shred once cooled.
- Combine shredded chicken with BBQ sauce in a bowl.
- Assemble bowls with roasted sweet potatoes as the base, topped with black beans, BBQ chicken, corn, red onion, cilantro, avocado slices, cheese, Greek yogurt or sour cream.
