Ingredients
- 1 lb beef sirloin or chuck
- 12 oz bowtie pasta
- 2 tablespoons olive oil
- 1 cup beef broth
- 1 cup heavy cream
- 4 oz Velveeta cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons garlic butter (or regular butter with 1 tsp minced garlic)
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- Cook the bowtie pasta according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season the beef with salt, pepper, onion powder, and smoked paprika. Sear for 3-4 minutes per side until golden brown. Remove from skillet.
- Reduce the skillet heat to medium and melt garlic butter, scraping up any browned bits.
- Pour in beef broth, bring to a simmer for 2 minutes, then stir in heavy cream and reduce heat to low.
- Add Velveeta cheese, stirring constantly until melted, followed by cheddar and mozzarella until thickened.
- Mix cooked pasta into the sauce until well coated.
- Fold in the seared beef and warm for an additional 2-3 minutes before serving.
