  • 2 medium Carrots, (diced)
  • 2 cloves of Garlic, (finely diced)
  • 1/4 tsp EACH: Dried Rosemary, Dried Thyme, Black Pepper

  • 125g / 4.5oz diced Smoked Turkey Bacon Lardons
  • 6 beef Sausages

Liquid Ingredients

  • 480ml / 2 cups Beef Stock
  • 2 tsp Worcestershire Sauce
  • 1 tsp Dijon Mustard

Other Ingredients

  • 3 tbsp / 45g Butter
  • 3 tbsp Plain Flour
  • 1x Beef Oxo/Bouillon Cube, (crumbled)

Topping

  • 400g / 14oz Baby Potatoes, (or as needed to cover the top)
  • 1 tbsp Butter, (melted)
  • finely diced Chives, (to garnish)
  • Salt, (as needed)

How to Make Beef Sausage Hotpot

Step 1: Fry the Turkey Bacon and Beef Sausages

Fry the turkey bacon in a large pan over medium heat until crisp with the fat rendered. Remove and set aside, leaving the fat behind. Increase the heat slightly and fry the Beef sausages until browned; they don’t need to be fully cooked at this stage. Remove them from the pan as well and set aside.

Step 2: Sauté Vegetables

Lower the heat back to medium. Add diced carrots and onion to the pan and fry until soft and lightly colored. If necessary, add some butter if the pan becomes dry. Then add garlic and fry for about 30 seconds before melting in more butter. Stir in flour to create a roux; gradually add beef stock while stirring continuously to avoid lumps.

Step 3: Combine Ingredients

Stir in Worcestershire sauce, herbs, pepper, crumbled bouillon cube, Dijon mustard, turkey bacon, and chopped Beef sausages along with any resting juices. Pour this mixture into your baking dish and let it sit for about 15 minutes until a skin forms on top.

Step 4: Prepare Potatoes

Preheat your oven to 180C/350F. Slice baby potatoes into about 1/4 thick rounds. Layer these slices over your filling in overlapping concentric circles starting from the outside in. Brush with melted butter and season generously with salt.

Step 5: Bake

Cover with foil and bake for 30 minutes. After that time has passed, remove foil and increase temperature to 200C/400F. Bake uncovered for another 20 minutes or until potatoes are tender. For an extra crispy finish, turn on the grill/broiler briefly at the end.

Step 6: Serve

Allow resting for about 5 minutes before garnishing with finely diced chives. Enjoy your hearty Beef sausage hotpot!

Common Mistakes to Avoid

When making a Beef Sausage Hotpot, it’s easy to overlook some details that can affect the final dish. Here are some common mistakes to avoid.

  • Skipping the browning step: Not browning the Beef sausages and turkey bacon can lead to a bland flavor. Always ensure they are well-browned for a deeper taste.
  • Ignoring the roux: If you don’t properly cook the flour into a roux, your hotpot may have lumps. Stir continuously when adding stock to create a smooth mixture.
  • Overcrowding the pan: Adding too many ingredients at once can cause uneven cooking. Fry in batches if necessary for best results.
  • Using the wrong potato type: Choosing starchy potatoes instead of waxy ones can result in a mushy topping. Opt for waxy potatoes for better structure.
  • Not seasoning adequately: Under-seasoning can make your hotpot bland. Taste throughout the cooking process and adjust salt as needed.

Refrigerator Storage

  • Store in an airtight container.
  • Consume within 3-4 days for best freshness.

Freezing Beef Sausage Hotpot

  • Portion into freezer-safe containers or bags.
  • Can be frozen for up to 3 months.

Reheating Beef Sausage Hotpot

  • Oven: Preheat to 180°C (350°F) and reheat covered with foil until heated through.
  • Microwave: Place in a microwave-safe dish, cover, and heat on medium power until hot, stirring occasionally.
  • Stovetop: Reheat in a saucepan over low heat, stirring frequently until warmed through.
