Ingredients
- 2 tablespoons olive oil
- 4 yellow onions (thinly sliced)
- 2 pounds Yukon Gold potatoes (washed)
- 4 tablespoons salted butter (or non-dairy butter)
- 3/4 cup half & half (or dairy-free milk)
- 1 teaspoon kosher salt
- 1 cup parmesan cheese (freshly grated)
- Fresh chives, thyme, and sage
Instructions
- Peel and thinly slice the onions.
- Heat olive oil in a skillet over medium heat. Add onions and cook for 40-50 minutes, stirring occasionally until caramelized.
- Wash the Yukon Gold potatoes, chop them into small pieces, and boil in a large pot of water for about 20 minutes until fork-tender.
- Drain the potatoes and mash until smooth.
- Incorporate butter, kosher salt, and half & half (or dairy-free milk) into the mashed potatoes.
- Stir in half of the caramelized onions along with grated parmesan cheese until well combined.
- Transfer to a serving bowl, top with remaining caramelized onions and fresh herbs.
