  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half (or dairy-free milk)
  • 1 teaspoon kosher salt
  • 1 cup parmesan cheese (freshly grated)
  • Fresh chives, thyme, and sage

Instructions

  1. Peel and thinly slice the onions.
  2. Heat olive oil in a skillet over medium heat. Add onions and cook for 40-50 minutes, stirring occasionally until caramelized.
  3. Wash the Yukon Gold potatoes, chop them into small pieces, and boil in a large pot of water for about 20 minutes until fork-tender.
  4. Drain the potatoes and mash until smooth.
  5. Incorporate butter, kosher salt, and half & half (or dairy-free milk) into the mashed potatoes.
  6. Stir in half of the caramelized onions along with grated parmesan cheese until well combined.
  7. Transfer to a serving bowl, top with remaining caramelized onions and fresh herbs.
