  • 2 tbsp butter
  • 1 1/2 cups fresh blueberries
  • 2 eggs, separated
  • 3/4 cup granulated sugar
  • 1/2 cup butter
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, melt 2 tbsp butter and stir in 1/3 cup brown sugar until dissolved. Pour into a greased 9-inch round cake pan and top with blueberries.
  3. In a mixing bowl, cream together 3/4 cup granulated sugar and 1/2 cup butter until fluffy. Add egg yolks one at a time, then mix in vanilla.
  4. Alternate adding dry ingredients (flour, baking powder, salt) with milk until just combined.
  5. Beat egg whites until stiff peaks form and gently fold them into the batter.
  6. Pour the batter over the blueberries and bake for about 55 minutes or until a toothpick comes out clean.
  7. Allow cooling for about 10 minutes before flipping onto a platter.
