Ingredients
- 1/3 cup light brown sugar
- 2 tbsp butter
- 1 1/2 cups fresh blueberries
- 2 eggs, separated
- 3/4 cup granulated sugar
- 1/2 cup butter
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan, melt 2 tbsp butter and stir in 1/3 cup brown sugar until dissolved. Pour into a greased 9-inch round cake pan and top with blueberries.
- In a mixing bowl, cream together 3/4 cup granulated sugar and 1/2 cup butter until fluffy. Add egg yolks one at a time, then mix in vanilla.
- Alternate adding dry ingredients (flour, baking powder, salt) with milk until just combined.
- Beat egg whites until stiff peaks form and gently fold them into the batter.
- Pour the batter over the blueberries and bake for about 55 minutes or until a toothpick comes out clean.
- Allow cooling for about 10 minutes before flipping onto a platter.
