- Additional powdered sugar for rolling
Instructions
- Cream 1 cup softened unsalted butter with 1/2 cup powdered sugar until light and fluffy.
- Mix in 1 teaspoon vanilla extract until combined.
- In another bowl, whisk together 2 1/4 cups all-purpose flour, 1 cup finely ground almonds, and 1/4 teaspoon salt.
- Gradually combine the dry ingredients into the wet mixture until just incorporated.
- Chill the dough for at least 1 hour in the refrigerator.
- Preheat your oven to 350°F (175°C).
- Roll dough into 1 tablespoon balls, make an indentation, fill with about 1 teaspoon blueberry jam, and reshape.
- Bake on a parchment-lined baking sheet for 12-15 minutes until lightly golden.
- Cool slightly before rolling in powdered sugar.
