- 2 ripe peaches, diced
- 2 Persian cucumbers, sliced
- ½ cup crumbled feta cheese
- 3 tbsp fresh lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tbsp finely chopped basil
- Kosher salt and freshly ground black pepper to taste
Instructions
- In a large bowl, combine fresh blueberries, diced peaches, sliced cucumbers, and chopped basil.
- In a separate small bowl, whisk together Dijon mustard, honey, lemon juice, salt, and pepper. Gradually add olive oil while whisking until emulsified.
- Pour the dressing over the salad mixture and toss gently to coat evenly.
- Sprinkle crumbled feta cheese on top and give it another light toss.
- Serve immediately for a refreshing summer dish.
