- 2 cups all-purpose flour

- 3/4 cup cold unsalted butter
- 3 large eggs
- 1 can (15 ounces) pumpkin puree
- 1/4 cup sour cream
- 2 tablespoons apple cider
- 3/4 cup maple syrup
- 1 cup heavy cream
Instructions
- For the crust, combine flour, sugar, and salt in a mixing bowl. Cut in cold butter until crumbly. Mix in egg, vinegar, and water. Chill for at least 30 minutes.
- Roll out the chilled dough and place it into a pie dish. Seal edges with egg white.
- Preheat your oven to 350°F (175°C).
- Whisk together eggs, pumpkin puree, sour cream, apple cider, vanilla extract, spices, and maple syrup until smooth.
- Pour filling into the crust and bake for about 70 minutes or until set. Allow to cool.
- For the topping, whip heavy cream with sugar until soft peaks form; spread over cooled pie before serving.
