  • 2 packages (6 ounces each) Driscolls Raspberries
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice
  • 2 slices sourdough or French bread
  • 2 tablespoons mayonnaise
  • 2 ounces Brie cheese
  • 4 slices Manchego cheese, white cheddar cheese, or provolone cheese

Instructions

  1. In a small saucepan, combine raspberries, sugar, vanilla extract, and orange juice. Cook over medium heat until boiling for about 5 minutes.
  2. Lower heat and simmer for 15-20 minutes until thickened. Let cool to room temperature.
  3. Spread mayonnaise on one side of each bread slice. Layer brie on the unbuttered side of one slice, then add raspberry compote and top with cheese.
  4. Close the sandwich with the second slice (mayonnaise side facing out).
  5. Heat a skillet over medium heat and grill the sandwich until golden brown on both sides and cheeses are melted (3-5 minutes per side).
