Ingredients
- 2 packages (6 ounces each) Driscolls Raspberries
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup orange juice
- 2 slices sourdough or French bread
- 2 tablespoons mayonnaise
- 2 ounces Brie cheese
- 4 slices Manchego cheese, white cheddar cheese, or provolone cheese
Instructions
- In a small saucepan, combine raspberries, sugar, vanilla extract, and orange juice. Cook over medium heat until boiling for about 5 minutes.
- Lower heat and simmer for 15-20 minutes until thickened. Let cool to room temperature.
- Spread mayonnaise on one side of each bread slice. Layer brie on the unbuttered side of one slice, then add raspberry compote and top with cheese.
- Close the sandwich with the second slice (mayonnaise side facing out).
- Heat a skillet over medium heat and grill the sandwich until golden brown on both sides and cheeses are melted (3-5 minutes per side).
