- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup brown sugar, packed
- 1 cup fresh pineapple chunks (or canned)
- ½ cup soy sauce
- ¼ cup ketchup
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- 2 tablespoons vegetable oil
- Chopped fresh cilantro (for garnish)
Instructions
- Season chicken breasts with salt and pepper.
- Heat vegetable oil in a large skillet over medium-high heat.
- Sear chicken for 4-5 minutes on each side until golden brown; remove from skillet.
- In the same skillet, combine brown sugar, soy sauce, ketchup, garlic, and ginger to create the sauce.
- Stir in pineapple chunks and return chicken to the skillet, coating well with sauce.
- Reduce heat to low, cover, and simmer for 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Garnish with chopped cilantro before serving.
