- 2 large chicken breasts (cooked and shredded)
- 2 tablespoons butter
- 1/2 tablespoon olive oil
- 1/2 cup buffalo sauce
- Fresh pepper to taste
- 1/2 cup thinly sliced celery
- Blue cheese crumbles (optional)
- Ranch dressing
- 2 heads of lettuce (romaine or iceberg)
Instructions
- In a large skillet, add shredded chicken and 1/2 cup of water over medium-high heat. Shred the chicken as it cooks until all water evaporates.
- Lower heat to medium-low and add butter and olive oil, stirring until melted.
- Mix in buffalo sauce, celery seed, and fresh pepper to taste. Stir well before adding sliced celery.
- Spoon the buffalo chicken mixture into each lettuce leaf, topping with blue cheese crumbles and ranch dressing.
- Serve immediately for the best flavor.
