Ingredients
- 1 large burrata ball (or 2 small)
- 4–5 ripe plums, halved and pitted
- ½ cup chopped pistachios
- 2–3 sprigs fresh thyme (leaves only)
- 2 tbsp extra virgin olive oil
- 1 tbsp honey (optional)
- Sea salt and cracked black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Place halved plums cut-side up on a baking tray lined with parchment paper. Drizzle with olive oil and honey if desired.
- Roast for 20-25 minutes until soft and caramelized.
- Let the plums cool slightly before plating.
- On a serving plate, place the burrata in the center and arrange the roasted plums around it, allowing their juices to flow across the dish.
- Top with chopped pistachios and thyme leaves, then drizzle with extra olive oil. Season with sea salt and cracked black pepper.
- Serve immediately alongside toasted sourdough or artisan crackers.
