Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tsp Cajun seasoning, adjust to taste
- Salt and black pepper, to taste
- 12 oz rotini pasta
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- Crushed red pepper flakes, to taste
- Fresh chopped parsley, for garnish
Instructions
- Boil a large pot of salted water; add rotini and cook until al dente (about 9-10 minutes). Reserve 1 cup of pasta water, drain, and set aside.
- Season chicken pieces with Cajun seasoning, salt, and pepper.
- In a skillet, heat olive oil and 1 tablespoon butter over medium-high heat; sear chicken for 7-8 minutes until golden brown. Add half the minced garlic in the last minute of cooking.
- Lower heat; add remaining butter and garlic to the skillet until fragrant. Pour in heavy cream and simmer for 2-3 minutes until thickened.
- Stir in mozzarella and Parmesan until melted into a creamy sauce. Season with Italian seasoning, salt, pepper, and crushed red pepper flakes if desired.
- Toss cooked rotini in the sauce, adding reserved pasta water as needed for consistency.
- Serve hot with fresh parsley for garnish.
