  • 75 grams finely diced apples (1 small apple)
  • 1/4 teaspoon cinnamon
  • 60 grams salted caramel
  • 100 grams egg whites (room temperature)
  • 1/4 teaspoon cream of tartar
  • 60 grams granulated sugar
  • 110 grams almond flour (sifted)
  • 200 grams powdered sugar (sifted)
  • 12 drops red food coloring (optional)
  • 113 grams unsalted butter (room temperature)
  • 180 grams powdered sugar
  • 60 grams salted caramel

Instructions

  1. Prepare the apple filling by melting butter in a saucepan, adding apples and cinnamon, cooking until soft, then mixing in salted caramel.
  2. Make the macaron shells by sifting almond flour and powdered sugar, whipping egg whites with cream of tartar and granulated sugar until stiff peaks form, folding in dry ingredients, and piping onto parchment.
  3. Bake shells at 150°C (300°F) for about 15 minutes until firm.
  4. For the buttercream, beat softened unsalted butter with powdered sugar until fluffy and mix in salted caramel.
  5. Assemble by pairing macaron shells and filling them with buttercream.
