  • 1 bunch celery, sliced in 1/2 inch thick slices
  • 2 small gala or honeycrisp apples
  • 1/2 english cucumber, finely chopped
  • 1 shallot, quartered and thinly sliced
  • 8 pitted dates, chopped
  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup grated parmesan cheese
  • 1 1/2 cups shaved parmesan cheese
  • 1/4 cup lemon juice
  • 1 teaspoon dijon mustard
  • 1/4 cup mayonnaise
  • 3 Tablespoon olive oil
  • 1 Tablespoon honey
  • 1 clove garlic, grated
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. In a large mixing bowl, combine the sliced celery, diced apples, chopped cucumber, thinly sliced shallot, chopped dates, walnuts (or pecans), and chopped Parmesan.
  2. In a separate bowl, whisk together the grated Parmesan cheese, lemon juice, Dijon mustard, olive oil, honey, grated garlic, kosher salt, and ground black pepper until well combined.
  3. Pour the dressing over the salad mixture and toss until well coated. Serve immediately or refrigerate until ready to enjoy.
