Ingredients
- 1 bunch celery, sliced in 1/2 inch thick slices
- 2 small gala or honeycrisp apples
- 1/2 english cucumber, finely chopped
- 1 shallot, quartered and thinly sliced
- 8 pitted dates, chopped
- 1/2 cup chopped walnuts or pecans
- 1/4 cup grated parmesan cheese
- 1 1/2 cups shaved parmesan cheese
- 1/4 cup lemon juice
- 1 teaspoon dijon mustard
- 1/4 cup mayonnaise
- 3 Tablespoon olive oil
- 1 Tablespoon honey
- 1 clove garlic, grated
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- In a large mixing bowl, combine the sliced celery, diced apples, chopped cucumber, thinly sliced shallot, chopped dates, walnuts (or pecans), and chopped Parmesan.
- In a separate bowl, whisk together the grated Parmesan cheese, lemon juice, Dijon mustard, olive oil, honey, grated garlic, kosher salt, and ground black pepper until well combined.
- Pour the dressing over the salad mixture and toss until well coated. Serve immediately or refrigerate until ready to enjoy.
