Ingredients
- 2 tablespoons butter (plus extra for greasing)
- 1 cup yellow onion, finely chopped
- 1 medium garlic clove, minced
- 4 cups corn kernels (fresh or thawed)
- 1 cup shredded cheddar cheese
- 3 large eggs
- 1 cup milk
- Salt and pepper to taste
- Optional: 1 pie crust
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish with butter.
- In a large skillet over medium heat, melt the butter. Add the onions and sauté until softened, about 5 minutes. Stir in the garlic and cook for another minute.
- Add the corn kernels to the skillet and sauté for an additional 2-3 minutes until warmed through. Remove from heat and let cool slightly.
- In a mixing bowl, whisk together eggs, milk, salt, and pepper until smooth. Gently stir in the cooled vegetable mixture and shredded cheddar cheese.
- Pour the mixture into the prepared pie dish (and line with crust if using).
- Bake for 35-40 minutes until set and lightly golden on top.
- Allow to cool for at least 10 minutes before slicing.
