Ingredients

  • 1 lb cheese tortellini (fresh or frozen)
  • 1 lb thinly sliced beef steak (ribeye or sirloin)
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cups milk
  • 1 cup shredded provolone cheese
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté the beef with salt, pepper, and Italian seasoning until browned. Remove from skillet.
  3. In the same skillet, sauté onions and bell peppers until soft.
  4. In a saucepan, melt butter over medium heat. Whisk in flour for 1 minute, then gradually add milk while whisking until smooth.
  5. Stir in provolone cheese until melted; season to taste.
  6. Combine beef and vegetables with the tortellini and pour the sauce over everything. Gently stir to combine.
