- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups cooked chicken, chopped
- 2 cups broccoli florets, chopped small
- 2 cups chicken broth
- 1 cup milk
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
Instructions
- In a large skillet over medium heat, warm olive oil and butter until melted. Sauté diced onion until soft.
- Add minced garlic and orzo pasta; toast for 2–3 minutes while stirring.
- Stir in chopped cooked chicken and broccoli florets; combine evenly.
- Pour in chicken broth and milk while seasoning with salt and pepper. Simmer on low for 10–12 minutes until orzo is tender.
- Stir in shredded cheddar and grated Parmesan until melted into a creamy sauce.
- Serve warm with extra cheese or cracked black pepper as desired.
