  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook the cheese tortellini in salted boiling water until tender, reserving some pasta water.
  2. Season the chicken with Cajun seasoning and spices; sear in olive oil until golden brown.
  3. In the same skillet, melt butter, sauté garlic, whisk in flour to form a roux, then gradually add milk.
  4. Stir in Velveeta and cream cheese until smooth; mix in mozzarella and Parmesan.
  5. Combine cooked tortellini and chicken with sauce; adjust thickness with reserved pasta water if needed.
  6. Serve warm, garnished with fresh herbs if desired.
