Ingredients
- 1 lb boneless, skinless chicken breasts
- 20 oz cheese tortellini
- 4 tbsp unsalted butter
- 4 cloves garlic
- 3 cups whole milk
- 8 oz Velveeta cheese
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and freshly ground black pepper, to taste
Instructions
- Cook the cheese tortellini in salted boiling water until tender, reserving some pasta water.
- Season the chicken with Cajun seasoning and spices; sear in olive oil until golden brown.
- In the same skillet, melt butter, sauté garlic, whisk in flour to form a roux, then gradually add milk.
- Stir in Velveeta and cream cheese until smooth; mix in mozzarella and Parmesan.
- Combine cooked tortellini and chicken with sauce; adjust thickness with reserved pasta water if needed.
- Serve warm, garnished with fresh herbs if desired.
