Instructions
- In a large bowl, combine the diced cucumbers, tomatoes, red onion, and chickpeas.
- In a small bowl, whisk together the lemon juice, olive oil, minced parsley, salt, and pepper.
- Pour the dressing over the salad and toss gently until all ingredients are well coated.
- Chill the salad for at least 15 minutes to allow the flavors to meld, or serve immediately.
