Ingredients

  • 1 cup almond flour (or oat flour)
  • 1/2 cup vanilla protein powder
  • 1/4 cup cashew butter (or almond/sunflower seed butter)
  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup milk chocolate chips
  • 1 tsp coconut oil (or vegetable oil)

Instructions

  1. In a medium bowl, whisk together almond flour, protein powder, and salt.
  2. In another bowl, combine cashew butter, 2 tbsp of milk, honey/maple syrup, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and mix well.
  4. Gently fold in mini chocolate chips until evenly distributed.
  5. Adjust consistency by adding more milk if needed to form a slightly sticky dough.
  6. Roll into 1-inch balls and place on parchment paper.
  7. Refrigerate for at least 30 minutes to firm up.
  8. Melt chocolate chips with coconut oil and dip each ball; tap off excess chocolate.
  9. Sprinkle with extra mini chocolate chips and refrigerate until set.
