Ingredients
- 1 cup almond flour (or oat flour)
- 1/2 cup vanilla protein powder
- 1/4 cup cashew butter (or almond/sunflower seed butter)
- 2–3 tbsp milk (dairy or non-dairy)
- 1/4 cup mini chocolate chips
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- Pinch of salt
- 1 cup milk chocolate chips
- 1 tsp coconut oil (or vegetable oil)
Instructions
- In a medium bowl, whisk together almond flour, protein powder, and salt.
- In another bowl, combine cashew butter, 2 tbsp of milk, honey/maple syrup, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and mix well.
- Gently fold in mini chocolate chips until evenly distributed.
- Adjust consistency by adding more milk if needed to form a slightly sticky dough.
- Roll into 1-inch balls and place on parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Melt chocolate chips with coconut oil and dip each ball; tap off excess chocolate.
- Sprinkle with extra mini chocolate chips and refrigerate until set.
