  • 1 tbsp baking powder

  • 1 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • For the filling: ½ cup unsalted butter, softened, ½ cup brown sugar, 2 tbsp ground cinnamon
  • For the glaze: 4 oz cream cheese, softened, ½ cup powdered sugar, 1-2 tbsp milk, ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with liners.
  2. In one bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix melted butter, milk, egg, and vanilla until combined. Add wet ingredients to dry ingredients and stir gently.
  3. For the filling, combine softened butter, brown sugar, and cinnamon in a small bowl.
  4. Fill muffin cups halfway with batter; add cinnamon filling on top and cover with more batter. Use a toothpick to swirl the mixtures gently.
  5. Bake for 18-20 minutes until a toothpick comes out clean. Cool slightly before glazing.
  6. For the glaze, beat cream cheese until smooth; mix in powdered sugar, milk, and vanilla until well blended.
  7. Drizzle glaze over cooled muffins and enjoy!
