- 2 cups flour

- 1/2 teaspoon baking powder

- 1 cup sugar
- 1 cup freshly grated zucchini (pressed to remove excess water)
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 tablespoons melted butter (for swirl)
- 1/4 cup sugar (for swirl)
- 1 tablespoon ground cinnamon (for swirl)
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan.
- In a bowl, whisk together flour, baking soda, baking powder, and salt.
- In another bowl, combine sugar, eggs, vegetable oil, vanilla extract, and grated zucchini until well blended.
- Gradually mix the dry ingredients into the wet mixture without overmixing.
- For the cinnamon swirl, mix melted butter, sugar, and ground cinnamon in a separate bowl.
- Pour half of the batter into the pan, add half of the cinnamon mixture on top and swirl gently. Repeat with remaining batter and swirl.
- Bake for 45-55 minutes or until a toothpick comes out clean. Allow to cool before glazing.
- Whisk powdered sugar with milk for glaze and drizzle over cooled bread.
