  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1 cup freshly grated zucchini (pressed to remove excess water)
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted butter (for swirl)
  • 1/4 cup sugar (for swirl)
  • 1 tablespoon ground cinnamon (for swirl)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In another bowl, combine sugar, eggs, vegetable oil, vanilla extract, and grated zucchini until well blended.
  4. Gradually mix the dry ingredients into the wet mixture without overmixing.
  5. For the cinnamon swirl, mix melted butter, sugar, and ground cinnamon in a separate bowl.
  6. Pour half of the batter into the pan, add half of the cinnamon mixture on top and swirl gently. Repeat with remaining batter and swirl.
  7. Bake for 45-55 minutes or until a toothpick comes out clean. Allow to cool before glazing.
  8. Whisk powdered sugar with milk for glaze and drizzle over cooled bread.
