  • 1/2 cup all-purpose flour (for streusel)
  • 1/4 cup packed light brown sugar
  • 1/4 cup granulated sugar (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, cinnamon, baking soda, salt, and nutmeg.
  3. In another bowl, mix sugar, vegetable oil, eggs, and vanilla until smooth.
  4. Combine wet and dry ingredients gently; some lumps are okay.
  5. Fold in grated zucchini and nuts if using.
  6. Pour batter into the prepared pan and smooth the top.
  7. For streusel topping: Mix flour, brown sugar, granulated sugar, and cinnamon; cut in cold butter until crumbly.
  8. Sprinkle streusel over the batter.
  9. Bake for 50-60 minutes or until a skewer inserted comes out clean.
