- 2 cups all-purpose flour

- 1/2 cup vegetable oil
- 3/4 cup whole milk
- 1 tbsp grated orange zest
- 2 cups cranberries (fresh or frozen)
- Coarse sparkling sugar (for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine flour, sugar, baking powder, and baking soda; whisk together.
- In another bowl, beat eggs and mix in oil, milk, and orange zest until combined.
- Pour the wet mixture into the dry ingredients and fold gently using a rubber spatula until just mixed.
- Fold in cranberries until evenly distributed.
- Fill each muffin cup about two-thirds full with batter and sprinkle with coarse sparkling sugar.
- Bake for approximately 22 minutes until golden brown and a toothpick comes out clean.
- Let cool in the pan for about 5 minutes before transferring to wire racks.
