  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour (for streusel)
  • 1/2 cup brown sugar, packed (for streusel)
  • 1/4 cup unsalted butter, cold and cut into small pieces (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk melted butter, milk, eggs, and vanilla until well combined.
  4. Pour wet ingredients into dry ingredients; mix gently until just combined.
  5. For the streusel topping, mix flour, brown sugar, cinnamon in a small bowl and add cold butter; combine until crumbly.
  6. Spoon muffin batter into prepared tin and sprinkle streusel topping over each muffin.
