- 1 1/2 cups crushed chocolate sandwich cookies
- 1/4 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 3 large eggs
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 2 tablespoons instant espresso powder
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Combine crushed cookies and melted butter in a bowl. Press into the bottom of the pan and bake for 10 minutes. Cool.
- Beat cream cheese, sugar, and cornstarch until smooth. Add eggs one at a time, mixing on low speed.
- In another bowl, whisk together sour cream, heavy cream, espresso powder, and vanilla; fold into the batter.
- Pour batter over crust, smooth top, wrap pan in foil, and bake in a water bath for 50-55 minutes until edges are set.
- Cool in oven with door ajar for an hour before refrigerating overnight.
