  • 1 1/2 cups crushed chocolate sandwich cookies
  • 1/4 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 2 tablespoons instant espresso powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Combine crushed cookies and melted butter in a bowl. Press into the bottom of the pan and bake for 10 minutes. Cool.
  3. Beat cream cheese, sugar, and cornstarch until smooth. Add eggs one at a time, mixing on low speed.
  4. In another bowl, whisk together sour cream, heavy cream, espresso powder, and vanilla; fold into the batter.
  5. Pour batter over crust, smooth top, wrap pan in foil, and bake in a water bath for 50-55 minutes until edges are set.
  6. Cool in oven with door ajar for an hour before refrigerating overnight.
