- Boneless chicken breast, diced
- Broccoli florets
- Red bell pepper, sliced
- Yellow bell pepper, sliced
- Green beans
- Olive oil or sesame oil
- Garlic, minced
- Soy sauce
- Honey or maple syrup
- Rice vinegar
- Cooked brown rice or wild rice mix
Instructions
- Heat oil in a wok or large skillet over medium-high heat. Add diced chicken and sauté until golden brown (about 5-7 minutes). Remove from the pan.
- In the same pan, add more oil if needed and stir-fry broccoli, red bell pepper, yellow bell pepper, and green beans until tender-crisp (about 3-4 minutes).
- Add minced garlic and pour in soy sauce, honey (or maple syrup), and rice vinegar; stir well to coat.
- Return the cooked chicken to the pan and toss everything together until heated through. Serve over warm cooked brown rice or wild rice mix.
