Ingredients

  • Boneless chicken breast, diced
  • Broccoli florets
  • Red bell pepper, sliced
  • Yellow bell pepper, sliced
  • Green beans
  • Olive oil or sesame oil
  • Garlic, minced
  • Soy sauce
  • Honey or maple syrup
  • Rice vinegar
  • Cooked brown rice or wild rice mix

Instructions

  1. Heat oil in a wok or large skillet over medium-high heat. Add diced chicken and sauté until golden brown (about 5-7 minutes). Remove from the pan.
  2. In the same pan, add more oil if needed and stir-fry broccoli, red bell pepper, yellow bell pepper, and green beans until tender-crisp (about 3-4 minutes).
  3. Add minced garlic and pour in soy sauce, honey (or maple syrup), and rice vinegar; stir well to coat.
  4. Return the cooked chicken to the pan and toss everything together until heated through. Serve over warm cooked brown rice or wild rice mix.
