- 1 lb Italian-style beef sausage
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 4 cups potatoes (peeled and diced into ½-inch chunks)
- 4 cups beef broth
- 1 cup heavy cream or half-and-half
- Fresh parsley or green onions (for garnish)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme or Italian seasoning blend
- 1 tbsp olive oil (for sautéing)
- ½ cup cheddar cheese (shredded)
Instructions
- In a pan over medium heat, sauté olive oil, onion, and garlic until translucent (3–5 minutes).
- Transfer to a slow cooker; add diced potatoes, beef sausage, beef broth, salt, pepper, and thyme.
- Cover and cook on low for about 6 hours until potatoes are tender.
- Stir in heavy cream or half-and-half before serving.
- Ladle into bowls and garnish with shredded cheese and herbs.
