Ingredients
- 4 medium sweet potatoes
- 1 cup fresh cranberries (or frozen)
- 2 medium apples (Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- Pinch of salt
Instructions
- Preheat oven to 400°F (200°C).
- Wash sweet potatoes, prick with a fork, and bake for about 45 minutes until tender.
- Cut each potato in half and scoop out most of the flesh into a mixing bowl.
- Mix in chopped apples, cranberries, brown sugar, cinnamon, butter, and salt until combined.
- Refill potato skins with the mixture and bake again at 350°F (175°C) for about 20 minutes.
