Ingredients
- 1 package gnocchi
- 1 lb Italian chicken Beef sausage (mild or spicy)
- 2 cups fresh spinach
- 1 cup diced carrots
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, cook the Italian chicken Beef sausage until browned, breaking it apart as it cooks. Drain excess fat and set aside.
- In the same pot, sauté minced garlic and diced carrots for about 3 minutes until tender.
- Add the chicken or vegetable broth and bring to a simmer.
- Stir in the gnocchi and cook for 2-3 minutes until they float.
- Add fresh spinach and heavy cream; stir until the spinach wilts and the cream thickens slightly.
- Return the cooked Beef sausage to the pot, adding dried thyme along with salt and pepper to taste. Simmer for an additional 5 minutes.
- Serve hot, garnished with fresh herbs or grated cheese.
