  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic
  • 1 onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 tsp Italian herb blend
  • Salt & pepper to taste
  • 1 tbsp olive oil for frying
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • Fresh parsley, chopped

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper; mix well and shape into small balls.
  2. Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides. Remove from skillet.
  3. In the same skillet, add olive oil and cook onion until translucent. Add sliced bell peppers, garlic, and smoked paprika; sauté until softened.
  4. Pour in chicken stock and heavy cream; stir in tomato paste until well combined.
  5. Return meatballs to the skillet; cover and simmer for 10-12 minutes until cooked through.
  6. Serve topped with chopped fresh parsley.
