Ingredients
- 500g minced chicken
- 1 egg
- 1 cup breadcrumbs
- 2 tbsp milk
- 2 cloves garlic
- 1 onion
- 1 red bell pepper
- 1 yellow bell pepper
- 1 tsp Italian herb blend
- Salt & pepper to taste
- 1 tbsp olive oil for frying
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 cup chicken stock
- 1 cup heavy cream
- 2 tbsp tomato paste
- Fresh parsley, chopped
Instructions
- In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper; mix well and shape into small balls.
- Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides. Remove from skillet.
- In the same skillet, add olive oil and cook onion until translucent. Add sliced bell peppers, garlic, and smoked paprika; sauté until softened.
- Pour in chicken stock and heavy cream; stir in tomato paste until well combined.
- Return meatballs to the skillet; cover and simmer for 10-12 minutes until cooked through.
- Serve topped with chopped fresh parsley.
