Ingredients
- 2 large boneless, skinless chicken breasts
- 12 oz penne pasta
- 4 tbsp unsalted butter
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 cup shredded mozzarella cheese
- 1 cup shredded sharp cheddar cheese
- ½ cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp Cajun seasoning
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- 2 oz cream cheese, softened
- 1 tsp Italian seasoning
- 1 tsp dried basil
- ½ tsp crushed red pepper flakes, optional
- Fresh chopped parsley or herbs for garnish
Instructions
- Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
- Season the chicken strips with Cajun seasoning, smoked paprika, salt, and pepper. Coat with grated Parmesan.
- In a skillet, heat butter and olive oil over medium-high heat. Sear chicken until golden brown, about 5-7 minutes.
- Add remaining butter and minced garlic in the last minute of cooking.
- In the same skillet, melt additional butter, sauté garlic until fragrant, then stir in cream and broth; simmer gently.
- Mix in softened cream cheese and whisk until smooth, then add mozzarella, cheddar, and Parmesan until melted.
- Season sauce with Italian seasoning and basil; toss cooked penne into sauce to coat evenly before serving.
