  • 12 oz penne pasta
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • ½ tsp crushed red pepper flakes, optional
  • Fresh chopped parsley or herbs for garnish

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
  2. Season the chicken strips with Cajun seasoning, smoked paprika, salt, and pepper. Coat with grated Parmesan.
  3. In a skillet, heat butter and olive oil over medium-high heat. Sear chicken until golden brown, about 5-7 minutes.
  4. Add remaining butter and minced garlic in the last minute of cooking.
  5. In the same skillet, melt additional butter, sauté garlic until fragrant, then stir in cream and broth; simmer gently.
  6. Mix in softened cream cheese and whisk until smooth, then add mozzarella, cheddar, and Parmesan until melted.
  7. Season sauce with Italian seasoning and basil; toss cooked penne into sauce to coat evenly before serving.
