- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 3 cloves garlic, minced
- 4 cups fresh spinach, roughly chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large pot, heat olive oil over medium heat and add the chicken pieces. Cook until browned (about 5-7 minutes).
- Stir in the minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a simmer, then mix in the heavy cream slowly while stirring.
- Add the cooked penne pasta and chopped spinach; stir until the spinach wilts (about 2-3 minutes).
- Finally, sprinkle shredded mozzarella cheese on top and stir until melted and creamy.
