  • 1/2 red bell pepper
  • 1/2 yellow onion
  • 2 cloves garlic (minced)
  • 4 cups fresh baby spinach
  • 1 tablespoon olive oil
  • 1 1/2 cups medium shell pasta (dried)
  • 8 oz. fresh chicken sausage
  • 1/2 cup half & half
  • 1/3 cup finely grated Parmesan cheese
  • Kosher salt
  • Black pepper
  • Crushed red pepper

Instructions

  1. Prepare the vegetables by quartering the cherry tomatoes and chopping the bell pepper and onion.
  2. Heat olive oil in a large skillet over medium heat. Sauté the chopped vegetables with salt and crushed red pepper for about 7–8 minutes until softened.
  3. Cook pasta according to package instructions until al dente.
  4. Add chicken sausage and garlic to the skillet; cook while breaking apart the sausage.
  5. Stir in half & half, then add spinach until wilted.
  6. Combine cooked pasta with sauce using a slotted spoon, incorporating reserved pasta water for creaminess.
  7. Finish with grated Parmesan cheese and a squeeze of lemon juice before serving.
