Ingredients
- 1 cup cherry tomatoes
- 1/2 red bell pepper
- 1/2 yellow onion
- 2 cloves garlic (minced)
- 4 cups fresh baby spinach
- 1 tablespoon olive oil
- 1 1/2 cups medium shell pasta (dried)
- 8 oz. fresh chicken sausage
- 1/2 cup half & half
- 1/3 cup finely grated Parmesan cheese
- Kosher salt
- Black pepper
- Crushed red pepper
Instructions
- Prepare the vegetables by quartering the cherry tomatoes and chopping the bell pepper and onion.
- Heat olive oil in a large skillet over medium heat. Sauté the chopped vegetables with salt and crushed red pepper for about 7–8 minutes until softened.
- Cook pasta according to package instructions until al dente.
- Add chicken sausage and garlic to the skillet; cook while breaking apart the sausage.
- Stir in half & half, then add spinach until wilted.
- Combine cooked pasta with sauce using a slotted spoon, incorporating reserved pasta water for creaminess.
- Finish with grated Parmesan cheese and a squeeze of lemon juice before serving.
